Coriander and cashew nuts pesto it’s a super tasty and very nutritious pesto variation. It is high in dietary fiber, vitamins and minerals like calcium, magnesium, sodium and potassium.
Ingredients:
- 100 gram Coriander
- 100 gram Cashew Nuts
- 100 gram Parmigiano Reggiano (raw parmesan cheese)
- 75 gram Extra Virgin Olive Oil
- 2 Tsp Lemon Juice
- Back Pepper
- Himalayan Salt
- Wild Garlic (or garlic clove)
Preparation:
- Wash coriander
- Grate Parmigiano Reggiano
- Place all in a blender and blend until smooth
