Apple, carrot and goji salad is very tasty and easy to prepare. Low GL, high in VitA, Folic Acid, Calcium, Potassium and Phosphorus.
Recipe Ingredients
- 1 Apples, raw
- 2 Carrots, raw
- 2 Tbs Goji berries, dried, soaked
- squeeze of Lemon juice, fresh
- 1 thumb Ginger
Cooking Instructions
- soak goji berries in a small amount of water
- wash and grate apple, carrot, ginger
- add soaked goji berries with the soaking water (it is sweet and will improve the taste of the salad) and lemon juice
- combine all using hands or a fork
- sprinkle with nuts or seeds if you wish
