Apple, carrot and goji salad is very tasty and easy to prepare. Low GL, high in VitA, Folic Acid, Calcium, Potassium  and Phosphorus. 

Recipe Ingredients

  • 1 Apples, raw
  • 2 Carrots, raw
  • 2 Tbs Goji berries, dried, soaked
  • squeeze of Lemon juice, fresh
  • 1 thumb Ginger

Cooking Instructions  

  1. soak goji berries in a small amount of water
  2. wash and grate apple, carrot, ginger
  3. add soaked goji berries with the soaking water (it is sweet and will improve the taste of the salad) and lemon juice
  4. combine all using hands or a fork
  5. sprinkle with nuts or seeds if you wish
